How to choose a pizza pan?

Bottom of the pizza pan

The bottom of the pizza pan also comes in a variety of variations, such as smooth solid, nib protruded, mesh distribution and super mesh. These bases are designed to bake a more perfect pizza, to allow air flow more freely and heat to penetrate more evenly.

① Solid: The bottom of the disc is smooth, no hole design, and there is no concave and convex. It's the most common pizza pan. The baked pizza has a crisp edge and a fluffy base. It can also be presented to customers as a service board.

② Protruding (Nibs) : The characteristics of the bottom of the plate are not smooth, and there is a bumpy touch, which can speed up air circulation, improve baking efficiency, better precipitate the moisture of the cake bottom, and make the cake bottom more crispy.

③ Perforated: The bottom of the baking pan is uniform sieve design, heat more evenly and quickly, shorten the baking time, make the pizza bottom more crispy.

(4) Super Perforated: The sieve at the bottom of the baking pan is distributed more and more densely, which can effectively prevent the cake base and the baking pan from sticking, further increasing the crispness of the pizza bottom and shortening the baking time.

The Pizza Pan Thickness

The thickness of the pizza pan is directly related to the crispness of the pizza base. The thicker the pizza pan, the harder it is for heat to penetrate the pan and the longer it will take to bake the pizza. The result is a very soft and chewy crust. On the other hand, the heat penetrates the thin pizza pan, which will bake faster, and the crust will be relatively crunchy.

It should be noted that due to different manufacturers, different production equipment and manufacturing processes, the thickness of the pizza baking pan will be slightly different.
